Mushroom Swiss Burger with Special bbq Mayo

A beef patty grilled to perfection. Topped with melty Swiss cheese, caramelized onions and mushrooms, a fried egg and arugula for some zippy freshness. Sauced up with special BBQ aioli.

How To Make mushroom swiss burger

The caramelized onions and mushrooms

1. Slice the onion in half and remove the outer layers.
Cut the tops off, then slice into 1/4” slices starting from the top. Slice down to the roots.

2. With a damp paper towel wipe 8oz mushrooms clean.
Slice about 1/4” thick.

3. Heat a medium size frying pan over high heat until hot.
Add the butter (1 Tbsp) when melted add the onions and sugar (1 tsp). Reduce heat to medium. Sauté for about 5-7 minutes or until the onions begin to brown.

4. Add the mushrooms, soy sauce (2 tsp) and pepper (a few grinds about 1/4 tsp). Sauté another 5 minutes or until the mushrooms are softened and browned.
Tip: After you add the mushrooms keep the heat high enough to evaporate most the water.
Transfer to a bowl and cover to keep warm until ready to use.

The beef patties

1. Preheat grill on high heat.

2. Crumble 1 lb ground beef into a mixing bowl.
Add the seasonings (1 tsp sea salt, 1/2 tsp garlic powder, 1/2 tsp paprika, & 1/4 tsp onion powder). Carefully mix to combine, taking care not to overwork the meat or it will become tough.

3. Divide into 4 portions about 4 oz each. Shape into patties, making them slightly bigger then your buns.

4. Place patties on the grill, reduce heat to medium to medium/high. Grill covered for 2-3 minutes per side. Reduce heat to low, top each patty with a slice of cheese. Let melt (about 1 minute). Remove patties, keep covered until ready to use.

The BBQ mayo

Mix all ingredients in a small bowl until well combined. (1/3 c mayo, 2 Tbsp bbq sauce, 1 tsp Worcestershire sauce, 1/2 tsp Tabasco sauce).

The fried eggs

1. Heat a large frying pan until hot. Add the butter (1 Tbsp) melt and distribute evenly across the bottom of the pan.
Reduce heat to low. Carefully crack your eggs into the pan. Sprinkle with salt and pepper.

2. Cover and cook 1-4 minutes or until the whites are set and the yolks are to your desired doneness.
Note: These burgers are best with a yolk that is thickened but still runny.

Assemble

1. Spread some sauce on the bottom bun, add:
2. Caramelized onions and mushrooms
3. Patty with cheese
4. Arugula
5. Fried egg
6. More sauce and top bun

Ingredients
  

Carmalized Onions and Mushrooms

  • 1 medium Sweet onion
  • 1 Tbsp Butter
  • 1 tsp Sugar
  • 8 oz Mushrooms I use portobello
  • 1/4 tsp Fresh cracked pepper (a few grinds)
  • 2 tsp Soy sauce

Beef Patties

  • 1 lb Ground Beef lean
  • 1 tsp Sea salt
  • ½ tsp Garlic powder
  • ½ tsp Paprika
  • ¼ tsp Onion powder
  • 4 Slices Swiss cheese

Fried eggs

  • 4 Eggs
  • 1 Tbsp Butter
  • Salt & pepper To taste

Sauce

  • Cup Mayonnaise
  • 2 Tbsp Barbecue sauce
  • 1 tsp Worcestershire sauce
  • ½ tsp Tabasco sauce

Other

  • 4 Hamburger buns
  • Arugula

Instructions
 

For the onions and mushrooms

  • Cut the onion in half. Remove outer layers, slice the tops off. Then slice about ¼“ thick starting from the top. Discard root piece.
  • Wipe the mushrooms clean with a damp paper towel. Slice into about ¼“ slices
  • Preheat a medium size frying pan over high heat until hot. Add butter, melt. Add the onions and sugar. Reduce heat to medium and sauté for about 5-7 minutes or until the onions get a brown color to them.
  • Add the mushrooms, soy sauce and pepper. Sauté another 5 minutes or until the mushrooms are softened and browned. (Keep the heat high enough so most the water from the mushrooms evaporates)

For the patties

  • Preheat grill on high heat
  • Crumble the beef into a mixing bowl. Add the seasonings. Carefully mix together, taking care not to overwork the beef or it will become tough.
  • Divide into 4 portions about 4 oz each. Shape into patties, making them slightly bigger then your buns.
  • Place patties on the grill, reduce heat to medium to medium/high. Grill covered for 2-3 minutes per side. Reduce heat to low, top each patty with a slice of cheese. Let melt (about 1 minute). Remove patties, keep covered until ready to use.
  • To toast the buns on the grill return the grill to high heat. Place buns cut side down on the grill for a couple minutes or until nice and browned.

For the eggs

  • Heat a large frying pan until hot. Melt the butter and distribute evenly across the bottom of the pan. Carefully crack your eggs into the pan. Sprinkle with salt and pepper.
  • Reduce heat to low. Cover and cook for 1-3 minutes or until the whites are set and the yolks are done to your liking. These burgers are best with a yolk that is thickened but still runny.

Finally for assembling!

  • It goes like this. Bun, sauce, mushrooms and onions, patty, egg, arugula, sauce, bun. Or however you decide 😉 Good job! Now go enjoy all your hard work!
