What is Balsamic glaze

Balsamic glaze is basically a balsamic vinegar that has been reduced to a thick syrup, sometimes with a sweetener like honey.

You can buy it at most grocery stores. You will most likely find it by the vinegars.

Preheat grill to high heat.

In a small bowl combine 1/2 cup ricotta cheese, 1-2 tsp zest and 1 tbsp honey (or to taste). Whip till smooth and well combined.

Cut peaches in half, remove the pits. Brush the cut side with olive oil.

Oil the grill grates (after they have been cleaned). You can do this buy dipping a folded paper towel in oil then use tongs to rub it across the grill.

Place peaches cut side down directly on the grill. Grill uncovered for 3-4 minutes or until the peaches are slightly warmed and grill marks appear.

Place a peach half on a plate cut side up. Top with about 2 Tbsp of the ricotta mixture. Drizzle with balsamic glaze. Garnish with some chopped fresh basil and a small sprinkle of coarse salt.
