This boozy chocolate mousse for two is quick to whip up and tastes soooo good! I could eat it every day. Which I literally did while I was testing the recipe haha! The silky smooth mousse is flavored with chocolate liqueur, paired with fresh strawberries and crushed chocolate sandwich cookies for crunch! Did I mention how good it is?

I have been into 2 serving desserts lately because I’ve only been cooking for two the last couple weeks. And I really want dessert but I don’t like making a full size that takes a week to eat. Not that I don’t want dessert every day….. I just don’t want the same dessert, that’s too boring. LOL!

  • Unflavored gelatin
  • Vanilla extract
  • Chocolate liqueur with cream

Can this recipe be made ahead?

This is best eaten the same day it is made.

If you do want to make it ahead we recommend putting the mousse in the serving dishes and then adding the strawberries and cookies on top before serving. It won’t look as cool but will taste just as great!

How to make Boozy Chocolate Mousse for Two

1. In a small dish dissolve 1/2 tsp unflavored gelatin in 1 Tbsp cold water, set aside.

2. Dice 1 cup of strawberries. Break 4-6 chocolate sandwich cookies into large chunks. Set aside.

3. In a medium size mixing bowl combine 2 Tbsp sugar and 2 Tbps unsweetened cocoa powder.

4. Add 2/3 cup heavy whipping cream and 1/4 tsp pure vanilla extract. Beat with an electric beater until soft peaks form.

5. Melt the gelatin in a small pan or in the microwave for 5-10 seconds or until liquid.

6. Add 1/4 cup chocolate liqueur with cream to the cream mixture. Start the beaters and pour the gelatin in while beating. Beat until combined. Don’t over beat or it will leave a buttery film in your mouth when you eat it.

7. Put a layer of broken cookies in the bottom of two small wine glasses or any glass 6-8oz parfait cups. Layer 1/4 of the mousse into each glass. Divide the diced strawberries between the glasses. Layer the rest of the mousse on top. Cut a whole strawberry in half, leave the leaves on for presentation if you want. Place on top with the cut side up. Sprinkle with chocolate curls or shaved chocolate if desired.

8. Refrigerate for a couple hours and serve!

  • 1 cup Diced strawberries
  • 1 whole Strawberry for garnish
  • 4-6 broken Chocolate sandwich cookies
  • Chocolate curls or shaved chocolate optional
  • 1 Tbsp Cold water
  • ½ tsp Unflavored gelatin
  • 2 Tbsp. Granulated sugar
  • 2 Tbsp. Unsweetened cocoa powder
  • cup Heavy whipping cream
  • ¼ cup Chocolate liqueur with cream
  • ¼ tsp Vanilla extract pure

Instructions
 

  • Dissolve the gelatin in the water, set aside.
  • Mix the sugar and cocoa powder together in a medium size mixing bowl. Add the heavy cream and the vanilla. Beat with an electric mixer until soft peaks form.
  • Melt the gelatin in a small pan on low heat or in a microwave for about 5-10 seconds or until its liquid.
  • Add the chocolate liqueur to the cream, start mixing. Pour the gelatin in while mixing. Beat until combined. Don't over beat or it will leave a buttery film in your mouth when you eat it.
  • Put a layer of broken cookies in the bottom of a small wine glass (I use 2 per glass) or any clear glass you want to use (around 6-8oz). Layer ¼ of the mousse on top of the cookies. Layer the diced strawberries and then the rest of the mousse on top of the strawberries. Cut the whole strawberry in half lengthwise, leave the leaves on for presentation if you want. Place on top of the mousse cut side up. Sprinkle with chocolate curls or shaved chocolate if desired.
  • Refrigerate for a couple hours and enjoy!
    If they set very long in the fridge the cookies will go soft. And the strawberries will start releasing juice, it just don't look as pretty.
