Grilled Peaches with Honey Citrus Ricotta

This is the perfect summer dessert! It is light and not too sweet. The citrus flavor pairs nicely with the peach and the balsamic glaze gives it just a little tang. Finished off with fresh basil and a small sprinkle of salt. It is delicious!

Ingredients
  

  • 2 large Peaches free stone
  • Olive Oil
  • ½ cup Ricotta Cheese
  • 1 Tbsp Honey or to taste
  • 1-2 tsp Orange Zest or Lemon Zest
  • A few leaves Fresh Basil
  • Balsamic Glaze
  • Coarse Salt Kosher or Coarse ground Pink Himalayan

Instructions
 

  • Preheat Grill to high heat.
  • In a small bowl combine the ricotta cheese, honey and zest. Whip until smooth and well combined
  • Cut the peaches in half and remove the pits. Brush the cut side with olive oil.
  • Place directly on the grill cut side down. Grill uncovered for 3-4 minutes or until the peaches are slightly warmed and grill marks appear. (Grilling uncovered keeps the peelings from slipping off)
  • Place a peach half on a plate cut side up. Top with about 2 Tbsp of the ricotta cheese. Drizzle with balsamic glaze. Garnish with chopped fresh basil and a small sprinkle of salt.
