Ingredients
  

  • 1 cup Diced strawberries
  • 1 whole Strawberry for garnish
  • 4-6 broken Chocolate sandwich cookies
  • Chocolate curls or shaved chocolate optional
  • 1 Tbsp Cold water
  • ½ tsp Unflavored gelatin
  • 2 Tbsp. Granulated sugar
  • 2 Tbsp. Unsweetened cocoa powder
  • cup Heavy whipping cream
  • ¼ cup Chocolate liqueur with cream
  • ¼ tsp Vanilla extract pure

Instructions
 

  • Dissolve the gelatin in the water, set aside.
  • Mix the sugar and cocoa powder together in a medium size mixing bowl. Add the heavy cream and the vanilla. Beat with an electric mixer until soft peaks form.
  • Melt the gelatin in a small pan on low heat or in a microwave for about 5-10 seconds or until its liquid.
  • Add the chocolate liqueur to the cream, start mixing. Pour the gelatin in while mixing. Beat until combined. Don't over beat or it will leave a buttery film in your mouth when you eat it.
  • Put a layer of broken cookies in the bottom of a small wine glass (I use 2 per glass) or any clear glass you want to use (around 6-8oz). Layer ¼ of the mousse on top of the cookies. Layer the diced strawberries and then the rest of the mousse on top of the strawberries. Cut the whole strawberry in half lengthwise, leave the leaves on for presentation if you want. Place on top of the mousse cut side up. Sprinkle with chocolate curls or shaved chocolate if desired.
  • Refrigerate for a couple hours and enjoy!
    If they set very long in the fridge the cookies will go soft. And the strawberries will start releasing juice, it just don't look as pretty.
